Read any of this Dr. Tom’s work on gluten as he just went around the world and interviewed over 80 experts that were scientists, MD’s, PHD’s, etc. There is no question people suffer from gluten sensitivity without having celiac. A simple search will show this augmented by the dozens of patients I see each year who don’t have celiac but suffer from NCGS. Remove the wheat and dairy for that matter and improvements are noticeable within days/weeks.
